Sweet Potato Casserole


Sweet Potato Casserole Recipe
Ingredients
4 large sweet potatoes (peeled and diced into 1-inch cubes)
2 large eggs
1/2 cup brown sugar
1/4 cup butter (melted)
1 teaspoon vanilla extract
Pinch of salt
2-3 cups miniature marshmallows (enough to cover the surface of the casserole)
Directions
Peel and dice the sweet potatoes into 1-inch cubes. Place them in a large pot. Cover with water and bring to a boil.
Lower the heat to medium-low and simmer for 15-20 minutes. The potatoes should be fork-tender.
Drain the potatoes and put them in a large mixing bowl. Mash them until smooth and creamy.
In another bowl, mix eggs, brown sugar, butter, vanilla extract, and a pinch of salt.
Pour the egg mixture into the mashed sweet potatoes. Stir until well combined.
Grease a 9x13-inch baking dish. Spread the sweet potato mixture evenly.
Top the casserole with a layer of miniature marshmallows, covering the entire surface.
Bake the sweet potato casserole for 25-30 minutes. The marshmallows should be golden brown.
Remove the casserole from the oven. Let it cool for 5-10 minutes before serving.
