Sweet Potato Casserole Recipe

Ingredients

  • 4 large sweet potatoes (peeled and diced into 1-inch cubes)

  • 2 large eggs

  • 1/2 cup brown sugar

  • 1/4 cup butter (melted)

  • 1 teaspoon vanilla extract

  • Pinch of salt

  • 2-3 cups miniature marshmallows (enough to cover the surface of the casserole)

Directions

  1. Peel and dice the sweet potatoes into 1-inch cubes. Place them in a large pot. Cover with water and bring to a boil.

  2. Lower the heat to medium-low and simmer for 15-20 minutes. The potatoes should be fork-tender.

  3. Drain the potatoes and put them in a large mixing bowl. Mash them until smooth and creamy.

  4. In another bowl, mix eggs, brown sugar, butter, vanilla extract, and a pinch of salt.

  5. Pour the egg mixture into the mashed sweet potatoes. Stir until well combined.

  6. Grease a 9x13-inch baking dish. Spread the sweet potato mixture evenly.

  7. Top the casserole with a layer of miniature marshmallows, covering the entire surface.

  8. Bake the sweet potato casserole for 25-30 minutes. The marshmallows should be golden brown.

  9. Remove the casserole from the oven. Let it cool for 5-10 minutes before serving.
